Ambrose is the Abbey Cellarkeeper and known for brewing many ales as well as performing expert magic tricks. He is the second cousin twice-removed of Rosey and stabbed by some of Cluny's soldiers while warning the Vole family, but rescued by Foremole's crew. He later holds the title High Keeper of the Cellar Keys, and participates in defending his home against Ironbeak's flock. During the Winter of the Deepest Snow, he brews a drink he calls "Cup o' Cheer", and within its firkin Fermald hides one of the Tears of all Oceans.
